Yokohama Squash

Yokohama is a dark green flattened squash with ribbing. The rind is lumpy,inside, it has dry, finely-textured, sweet-tasting flesh. Because of its unique shape, the ‘Yokohama’ squash can be sliced easily into thin segments, thus it is ideal for tempura and added to many Asian-style soup stocks. Also a very unique piece for ornamental purposes.
