Yokohama Squash
Yokohama is a dark green, flattened squash with ribbing. The rind is lumpy; inside, it has dry, finely textured, sweet-tasting flesh. Its unique shape makes it easy to slice into thin segments, ideal for tempura and Asian-style soup stocks. It is also a distinctive ornamental piece.
